It was a blessing to grow up in a mixed cultured environment, my school, my home, my church… there were so many cultures around me, which meant awesomely good food!  I quickly learned how to create many cultural dishes which I have to say… have turned out to be pretty authentic.

Seasoned Tofu, green mango, carrots, cucumber, sprouts, herbs and lettuce leaves are rolled up into steamed rice papers and served with an Satay Peanut sauce.  If you close your eyes and eat these, you might actually think you somewhere in East Asia, yes, they are THAT good!

Additional Info

Cashews will be substituted for tofu for those with low thyroid. Sesame dipping sauce can be substituted for those with nut allergies for the peanut sauce.
