I was so privileged to grow up in a mixed race home. My mom was from England and my dad from Israel. That being said, hummus, tabbouleh salad and falafels were a regular part of my diet. However, as a nutritionist, deep frying anything becomes an absolute no-no. So these ones are baked.. which of course is not authentic.. but they sure are delicious and incredibly healthy.
Ground chickpeas, onions, garlic and herbs are formed into patties and baked until golden. Served with an authentic tahini dressing, these are great in a gluten free wrap, over brown rice or thrown right on top of your salad.
