I love curry’s!  I have learned over the years though that curry in India, is not the same as curry in the West Indies or Thailand or Malaysia for that matter… there are actually so many curries with all different flavors.  But all of them are wonderful to me!   Turmeric seems to be the only similar ingredient in all curries, and with it’s natural anti-inflammatory properties; I’m so glad it’s in them all.

Ordinary Channa-Style curry is dressed up with tofu and sweet potatoes which adds and extra pack of protein and wonderful boost of Beta Carotene among other wonderful nutrients.
