Unless you are from the Philippines, you are probably not so familiar with the delicious and incredible taste of the humble mung bean.  Unlike other beans, this one should be cooked until the bean actually looses it’s form… that is when all the flavor comes out.

Coconut, greens and tomatoes are simmered together with mung beans, garlic, onions and thyme to produce a fragrant mouth watering dish.  One taste of this stew and it will easily become your new favorite.
